Hospitality is at the center of Kazakh culture, and the dastarkhan, the generous shared table, is where you feel it most. Here is what you are likely to be offered.
Beshbarmak
The national dish: hand-cut noodles with tender boiled meat and onion broth. The name means five fingers, because it was traditionally eaten by hand.
Baursak
Golden puffs of fried dough served with almost everything. They are best warm, with butter or honey.
Tea culture
Tea is served in small bowls called piyala and refilled often. Leaving a little in your bowl is a polite way to say you have had enough.
